At Tomas Postigo, everything is harvested into 10-kilo boxes, reducing the bruising of the fruit. After staying in a cold chamber, the clusters go through a selection process where several people hand separate anything that’s not a grape (leaves, stems …) or take out the clusters that do not meet the strict quality standards of the winery. Then, once the cluster has been de-stemmed, the grapes will go through an automatic selection machine that will remove the unripe berries, the de-stemming remains, or overripe grapes.

Tasting Notes
Red cherry color with an intense garnet rim. Ripe black fruit with hints of red fruit along with dairy notes. Well-integrated wood, barely-noticeable toast, pleasant spices. Round on the palate, oily , meaty, longlasting fruity finish, fresh and mineral aftertaste. Flavorful.
Food Pairing
Perfect for matching any grilled meats, stews or barbequed meats. It also accompanies charcuterie, steaks and even game and stronger cheeses.

It’s been many years since Tomás, one of the most venerable winemakers in Ribera del Duero with more than thirty-five vintages to his name, began to instill in his children all of his knowledge and love for wine. The four have grown up in the winery, in a special environment learning the importance of a job well done, prioritizing quality and attention to detail, all paramount in Ribera del Duero.
The fact is, this family is one of the most important factors in the rise to prominence and production of Tomás Postigo wines. The goal is to always imprint that characteristic of daily work that is always carried out with care. A personal stamp from the family that demonstrates the closeness and humility that is shown in their final product, in each and every one of their bottles.
