Garganta del Aguila, which means "neck of the eagle" and which symbolizes the local eagles as they soar fully extended over the wild landscape. The wine itself also respects the heritage of the region in its purity of expression as it is naturally fermented in concrete tanks and again matured in concrete tanks with no barrel aging before bottling. This is a throwback in time as to what villagers in the region would have been enjoying 100 years ago but with expert winemaking that fully expresses the potential of the old Garnacha. AT LEAST 100 y/o vineyards at 3,000 ft of elevation in a really wild part of the Northern Sierra de Gredos.

"Aromas include rich old roses, dark plums, dark cherries, strawberries, and raspberries. Flavors include dark cherries, dark plums, blackberries, and nectarines. There is an elegant medium body, perfect balance and acidity, and a refreshing minerally finish.
Food pairings would include Filet Mignon, New York Steak, beef stew, brisket, beef bourguignon grilled or roasted veal, pork, and chicken, cassoulet, coq au vin, salmon, tuna, clams, mussels, Asian and Mexican beef, pork, and chicken dishes, tamales, charcuterie, and cheeses."

Sierra de Gredos producer that is near Cebreros at the northern end of the Sierra de Gredos. This is even more wild and difficult to farm terrain that is also at around 3,000 feet of elevation and which consists of small parcels of 100 year old Garnacha vines. As with the central part of the Sierra de Gredos, the soils are decomposed granite which provide an exceptional depth and expression to old vine Garnacha.
